This coffee is roasted enough to be brewed in an espresso machine and also not so much it can't be enjoyed as a filter brew.
This coffee is the end result of over 50 hard working producers in th Pitalito, Acevedo, Palestina, Timaná, and Suaza regions. Commonly referred to as naturally decaffeinated, the process used to decaffeinate this coffee is done using mountain water and ethyl acetate, a chemical that's naturally found in many plants and foods. Conveniently, sugar cane grows in abundance in this region and extracting the E.A from it is a simple process of extended fermentation. Through the process, the green coffee is exposed steam, causing swelling making the caffeine available for extraction and after washing it with E.A it's cleansed with fresh water and slowly dried.
