We’re back working with Ture Waji for a second year, continuing our relationship with the producer behind Sookoo Coffee.
This naturally processed lot comes from the Sawana drying station, owned and operated by Ture and located in the hills of Shakiso in Guji. Established in 2022, Sawana was built to separate processing for coffees from Bookkisa and Shoondhisa, which were previously handled at a single site. Today, the station purchases cherries from around 30 smallholder farmers, allowing for more focused processing and greater clarity in the final cup.
Coffee production in Ethiopia looks very different to what we see in much of Latin America. Rather than large estates with thousands of trees, most Ethiopian growers manage small garden plots, often growing coffee alongside subsistence crops. While the average farm size sits around 2.5 hectares, planting density is far lower, with much of the coffee grown in fully or semi-forested systems. The result is fewer trees per hectare and lower yields, with the national average sitting at just 0.8 kg of cherry per tree.
