1. Unscrew the bottom and fill up to the valve with just off the boil filtered water.

2. Grind your coffee on a fine setting and fill to just below the top of the basket.

3. Pop the filter into the bottom of the stovetop, then using a tea towel to hold the base, screw the top on tightly.

4. Place the stovetop on your smallest burner, so the flame is underneath and not flicking up the sides. Keep the top open so you can watch for the first drops of coffee to start pouring.

5. The coffee will look viscous and dark like mollasess at the start, and should come out reasonably slowly.

6. Pay attention as it becomes lighter and more bubbly, this is the sign it's almost at the end of the brew.

7. When it hisses and bubbles take it off the heat, you can run cold water over the bottom of the stovetop to cool it rapidly and stop any more extraction, this can help reduce astringency in the cup.

TIPS AND TRICKS

Using very hot or boiling water helps shorten the brew time and reduce bitterness in the final cup.

 

Don't let the flame from the burner creep up the sides of the brewer, this can cause damage to the brewer and also increase astringency in the final cup.

 

You don't need to pack the coffee into the filter basket, just fill it to the top and give it a shake to level it out.

 

Make sure the rubber gasket is in tact in order to maintain a good pressure throughout the brew.
