Ever Nelson Pajoy grew up on his fathers coffee farm, where from a young age he would help him in the day to day jobs. His passion for growing coffee grew during this time and he became determined to start a family business of his own. Finca El Higuero was born, and 20 years later the focus is still on improving their methods to produce higher quality coffee.
Ever built the farmhouse he and his family live in himself, and because space is so limited on the farm he designed it so the roof can be used to dry coffee. His wife takes care of the drying process, making sure that the coffee dries at the correct rate and as evenly as possible, whilst their children help out during the busy harvest periods.
We chose this lot from Ever Nelson as our second This is Colombia release for 2021, a shining example of a true family run farm with a focus on quality.
