High in the mountains of Tablón de Gómez — about three dusty, winding hours past the nearest paved road — a group of coffee growers have been perfecting the honey process for generations.

This lot is 100% Caturra, grown above 1850m and processed with a simple but deliberate recipe: 48 hours of fermentation in mucilage, then around 18 days drying in the sun on patios and raised beds. Once ready, the coffee is brought to Buesaco, where it rests for 30 days before milling.

We’ve just landed a blend from over 40 of these producers, and it’s everything we love about high-altitude Colombian coffees — vibrant, layered, and carrying that sweet, sun-dried magic that only comes from patient hands and mountain air.
