Los Trapiches comes from a region of Huila rich in colonial heritage. It's named after the numerous cane sugar mills that thrived in the area in the 1800s. The brand consists of 20 small-scale farmers who farm the hills surrounding the town of Paicol. We chose this Pink Bourbon lot for two reasons: our love of Pink Bourbon coffee and the sweetness derived from the processing method used. Honey process involves removing the skin and most of the pulp from the coffee cherry after harvesting while retaining the mucilage.
During drying the mucilage ferments and infuses sugars and sweetness into the coffee seed, ultimately influencing the final cup's flavour. Los Trapiches really knocked our socks off with this coffee, enjoy!
