This is a special one! Luis Edier is no stranger to our menu, and we’ve been purchasing his coffees through Caravela since 2017. This lot is a particularly exciting release, a 100% Gesha that Luis chose to process using the honey method.

In honey processing, the skin is removed from the cherry while leaving some of the mucilage intact. The beans are then dried with this sticky layer still on, before being washed. And when a producer as experienced as Luis takes this route, the results are usually pretty sublime.

This is a Gesha that’s gorgeously sweet, with notes of tropical lychee and candied lime, plus a wickedly smooth body and finish reminiscent of Belgian chocolate.
