Rachia comes from more than 350 smallholder farmers in the Yirgacheffe region, who deliver their ripe red cherries to the Gizat Washing Station in Idido. It’s a busy, community-driven place — full of movement during harvest as fresh coffee flows in from nearby hillsides each day.
Once delivered, the cherries are hand-sorted to remove anything less than perfect, then spread out on raised African beds to dry for around 15–20 days. These drying beds are built for balance — raised for airflow, shaded when needed, and constantly tended to keep the cherries drying evenly. It’s a simple, low-tech process, but one that demands real attention and skill.
When the cherries hit that ideal moisture level, they’re moved to a local warehouse for storage and final prep — sorted again by colour, density and screen size before heading off for export. Every step is designed to protect the integrity of the fruit and preserve the quality that makes Yirgacheffe so revered.
Rachia is a perfect example of Ethiopia’s smallholder magic — hundreds of growers, each tending tiny plots, coming together through shared effort and collective craft.
