Much of Carlos Pola's adult life has been driven by the pursuit of revolutionising specialty coffee in his homeland of El Salvador. Born into a coffee farming family, Carlos began his career in the textiles industry and it wasn't until 1997 when he purchased Finca las Brisas that he truly fell in love with coffee. Drawing on his experiences in textiles he began improving production efficiency, and built a lab to experiment and educate farmworkers on specialty coffee. He began planting nitrogen-fixing shade trees and growing specific fungi throughout the farm in order to reduce the amount of chemical pesticides and fertilisers used.
