High in the remote, steep hills above the La Plata region, surrounded by thick forest lies Finca el Bosque, Gabriel Quilindo's coffee farm. For the past 22 years, Gabriel has managed the farm in step with the nature surrounding him, planting native trees to shade his coffee plants, and using the bi-products from processing the coffee, such as the mucilage and pulp to make his own fertilisers. This approach, rooted in sustainability, has seen Gabriel become a leader in his community.
Gabriel believes magic happens in the final stage of processing when the coffee is left to dry slowly with good ventilation and a watchful eye, when done right the flavours are unique and wonderful.
