In the town of Haro Wachu lives a washing station named Wolichu Wachu that serves just under 5,000 local coffee growers from the surrounding Uraga district. Ethiopian coffees are commonly categorised by the distinct flavour characteristics of their growing regions, this coffee being from the "Guji" zone. Guji was named by the Oromo people, one of the largest ethnic sub groups in Africa. The Guji zone has a rich history in coffee production.
Coffees delivered to Wolichu Wachu are first sorted by the quality of the cherry, depulped and then fermented for 48-72 hours to soften the cell structure of the green bean. It is then washed clean of any remaining mucilage and is then dried evenly on raised beds for 9-12 days and sorted once again. This lot was specially instructed in how the processing was carried out. The coffees underwent multiple passes in the sorting phase at the start and finish of processing.
