Jorge has heavy rains to thank for his switch to producing specialty coffee, for if the rains had not blocked the road to the town where he sold his coffee he never would have been forced to dry it himself. This random event resulted in Jorge realising the value of his product when he had control of the drying process, the result was spectacular and the higher prices meant he and his brother could improve the farm, their homes and their family's quality of life. This Pink Bourbon lot was selectively harvested, de-pulped and fermented anaerobically for 48-50 hours, the result is a crazy sweet, syrupy espresso that is still clean and free of defects.
Thank goodness for those rains so we can all enjoy Jorge's hard work!
